Spiced bream

Ingredients:

  • 4 bream fillets 
  • 2 tbsp oil 
  • 1 tsp ras el hanout 
  • Pinch of salt 
  • ½ roast butternut squash 
  • For the slaw: 
  • 1 grated carrot  
  • ½ fennel bulb. Finely sliced 
  • ½ red cabbage, shredded 
  • 1 tbsp pomegranate seeds 
  • 1 tbsp mayo 
  • 1 tsp harissa paste 
  • Juice and zest of ½ orange 

Method:

  1. Make your slaw by combining all ingredients in a large mixing bowl and stirring in the mayo, harissa and orange juice.  
  2. For the fish heat oil in a frying pan and season the bream fillets with a sprinkle of spice before cooking.  
  3. Start the fish skin-side down and then after 3-4 mins turn over and cook on the other side for 3 mins.  
  4. Serve the fish on a bed of slaw with some roasted squash on the side.
