Ling is a member of the cod family. It has delicious white flesh and is excellent in a range of dishes. The moist white flesh can be made into fish cakes and is well suited to smoking or salt curing as a replacement for the traditional cod. Also, with a sweet flavour, Ling suits dishes with fresh flavours with fruit, or citrus’ and is cooks well on the grilled or baked. Best June to January.

Greek ling bake
A greek style fish dish giving a taste of the Mediterranean.
A substantial fish which kept beautifully moist and chunky after cooking for 25 minutes in the oven in an orange and lemon juice mix. Those new to it thought it was very cod- like with its firm white flesh, so are now firm converts to its ease of cooking and reliable texture.
The great thing about the Stevenson fish boxes is the freshness and variety of fish, some of which we have not tried before. Last night we had “Greek Ling bake”, recipe from website, it was delicious. We would certainly choose this fish again to go in our next fish box!
