Brill is a firm-textured, sweet-tasting flatfish closely associated with turbot. The flatfish has a medium flavour which is slightly sweeter than that of turbot. Landed from our boats our Brill is expertly filleted by our fishmongers for your convenience, simply cook using our delicious recipes or one of your own. Brill is particularly tasty pan-fried or baked. Best between April and June.

I spoke to Elaine (Retail Manager) about this before ordering and she could not have been more helpful, recommending this over turbot at this time of year.
This brill arrived yesterday – exactly as promised – for my husband’s birthday treat. The packaging was amazing and all the fish were well-chilled. I poached the brill in French Vermouth (Noilly Prat) and thickened the reduced stock with cream.
Highly recommended – will undoubtedly order this again.
We drank an excellent Gewurztraminer with it, but unless you fancy driving to the Dolomites, we’d recommend this as the next best thing:
